'SAMBAL' BRINJAL
mummy loves this dish. mom cooked it for her 'buka puasa'.
mom can stand spicy food. heart u mom!!
'SAMBAL' BRINJAL
recipe : mummy cha
ING
2 tbsp anchovies
1 onion
2 garlic
10 dry chilies
7 cili padi - bird eye chilies (optional)
***blend fine
salt & sugar to tasted
1/4 cup tamarind juice
cooking oil
2 medium brinjal - cut to bite size
METHODS
heat pan with some amount of cooking oil
fry brinjal for a while - let them tender, transfer to a plate and put aside
using the same pan -( reduce some of the cooking oil - left about 3 tbsp)
saute all the blend ingredients.
let the sambal cook then add in tamarind juice
cook till sambal thicken, add salt & sugar to taste.
if the sambal are perfect according to your tasted , then add brinjal
mix well and off the fire.
served with plain white rice... yummy to the max...
